Mini. Mini. Mini.

Happy New Year to all! It’s a new year for my pastries, for my creativity, and for me. These mini pastries were made for Christmas Day, a family reunion for my dad’s side. Over 18 dozen mini pastries all hand crafted by me in less than a week’s time. It sure was crazy! Thank goodness for my good time management, otherwise I would have been up all night all day finishing these babies on Christmas Eve. Mini Fruit Tarts in Phyllo Shells. Mini Vanilla Eclairs topped with Chocolate. Mini Berry Cream Cakes.

Everything turned out BEAUTIFUL, but I had some minor issues. Wished I had used sucree tartlets instead of phyllo shells. The phyllo tasted so raw, plus it soaked up the cream and fruit juices quickly. The Berry Cream Cake had too much gelatin in it, making it firmer than what I had wanted. Other than that, I wished I could have had made more to stuff my stomach. Thanks to my sister, Pa Chia, for editing these beautiful photos! Until my next project, Happy Eatings!
