Mother’s Day Mousse Cake

Mother’s Day was a week ago. I’ve been too busy baking lately to post up my latest creations. Since my mom loves exotic fruits, I copycat Patrick’s Bakery Passion Cake. A Coconut Sponge Cake filled with Vanilla Bavarois and topped with Passion Mousse. Decorated with glazed fruits and Pink Tinted Macarons. I would have to say this is my all-time favorite cream cakes that I have made. The passion fruit mousse was more tart than I expected, but the sweetness of the bavarois balanced out the tartness. It was a beautiful cake until it started to warm up more. Key to this cake? Gelatin. Now I need to experiment with more exotic fruits, until then, Happy Eatings!
